The vineyard cycle was characterized with a rainy autumm and winter. The sprout was healthy so we had to do a very good green pruning.
Summer was hot and dry with a very high temperature differences between night and day. Field tasks as cleared bunches let the grapes achieve fenolic riping completely.
Our viticultura is adapted for a vineyard situated at 900m altitude, with limestone soil, respecting the enviroment and wildlife.
Handy harvest took place and the end of october, using 12kg boxes and with a double selection of the bunches at vineyard and at a sorting table in the winery.
Fermentation and settled, 9 days, was done separately for tempranillo and syrah varieties in stainless stell tanks, with low temperatures due to preserve variety aromas.
The aged into 225l oak casks with medium toasted takes 10 months to set the fruit characteristics of the variety which are sign of the fenolic riping.
The result is a young wine made with 75% tempranillo + 25% syrah full of fruit aromas together with the mineral touches thanks to the limestone soil of Cuellar and the spicy touches of the best french oak.
