Vintage with a begining of the cycle so cold and rainy. The soil was full of water and the months of may and june were cool and rainy so the cycle came with delay. In other way, july and august were so hot with the envero at middle august, long but irregular, so that we had to reduce the number of bunches to achieve good riping in the rest ones.
All this field works gave us a yields of 2.800 kg/ha, so low but with a very good quality. Harvest began october 10th.
Handy harvest was done into 12kg boxes with of course the double selection of the bounches at vineyard and winery.We made a viticulture acording to our vineyard situated at 900m, with limestone soil respecting the enviroment and wildlife.Into the winery we made a slow start of the fermentation with low temperatures till the begining of it.
Fermentation and maceration for a total of 15 days during which temperature was controlled oxygenation and frequent pumping over 24 hours. We filter the wine and only use the free flowing one to continue the process. We filter the wine and only use the free flowing one to continue the process. Malolactic fermentation is done in casks.
Twenty six month ageing is done in French oak casks, 225l, with médium toasted oak. Due to not using filtration or clarification could allow small particles to appear in the wine. The result is a wine to keep on time, perfect for tipycal “castellanas” meals, baken meats, stuffed meats,…
