The vineyard cycle during 2016 has a rainy autumn and winter time. The growing of the vineyard was healty and we have to do a deep pruning.
Summertime was so dry and hot, with the typical high contrast of temperature during night and day. Tasks such as the thinning of clusters allowed the fruit to acquire full phenolic maturation.
Our viticulture is adapted to a vineyard of height, to 900 meters, in limestone soil. Being respectful of flora and fauna.
The harvest is done at the end of October by hand, in boxes of 12 kg, with a double selection of bunch, both in vineyard and cellar.
The alcoholic fermentation and maceration, of 15 days, was realized in barrels of 225 liters of oak open with hardly any extraction. The aging in barrel used of 225 liters of medium toast has been 10 months.
The result is a 100% SYRAH WINE growed from the limestone soil
