Vintage characterised with a very dry winter time. Spring, sunny and rauny. Low water levels in soil. Very warm may and june . Very hot july, august and september.
All this field works gave us a yields of 2.800 kg/ha, so low but with a very good quality. Harvest began october 11th.
Handy harvest was done into 12kg boxes with of course the double selection of the bounches at vineyard and winery.We made a viticulture acording to our vineyard situated at 900m, with limestone soil respecting the enviroment and wildlife. Into the winery we made a slow start of the fermentation with low temperatures till the begining of it.
Fermentation and maceration for a total of 15 days during which temperature was controlled oxygenation and frequent pumping over 24 hours. We filter the wine and only use the free flowing one to continue the process. We filter the wine and only use the free flowing one to continue the process. Malolactic fermentation is done in casks.
Thirteen months ageing is done in French oak casks, 225l – 300l with médium toasted oak.
Due to not using filtration or clarification could allow small particles to appear in the wine. 100% tempranillo grape.
